Thanks for the incredible experience we had in October when you came to my home to teach a cheese class. You presented and taught each of the five cheeses in a relaxed manner that allowed all of us to participate hands-on to get a real feel for things such as the firmness of a curd when it is ready to be cut. You cannot get that from a book! By the end of the class we were full of knowledge, wine, fine paired food and the cheese we had prepared. This class was my birthday gift and I will never hesitate to ask my family for an "experience" gift again!

Why not have a class for your group, special occasion, or team building event? Mark has taught private classes in Seattle Washington and other locations in Washington state and Oregon for the last nine years. Have pots, will travel! to any Rogue Valley location. The private classes give you an opportunity to share cheese making with your friends, family, or acquaintances in a small group setting. They also provide a more hands on experience than the public classes Public classes are larger-usually with 10 to 16 students. Private classes (except for team building classes) are limited to eight people with a minimum of four. There are various possibilities for these classes:

- Have the class at your home. You'll need a table (or kitchen island) that will comfortably seat the number of students in the class and a stove (preferably gas). You supply the serving platters, plates, and utensils. Mark brings everything else.
- Have the class at our home in the Applegate Valley. We supply everything.
There are also a number of format possibilities:
- a three hour soft cheese making class (oriented toward hands on experience)
- a three hour hard cheese making class
- a five hour combination soft/hard cheese making classes. We will make a Gouda and several soft cheeses.
